My first (and hopefully last) carrot cake...and don't forget the jockeys!

I am the official birthday cake maker at my office and last week was Stephanie's birthday. She really like carrot cakes, something I try to avoid. So I was FREAKED OUT to make a carrot cake...seriously, how do you make a carrot cake? Like this?

Oh yeah, a carrot cake isn't a real carrot cake without the cake jockeys. These babies have been hidden in multiple peoples homes, driven from UT to MI, flown from MI to UT, shipped back from UT to MI, and now they have learned to travel by carrot. We just can't get rid of these little guys!

You are going to be my/our official cake decorator when you come home; however, I hope you leave the babies in MI (unless they're for "someone special's" baby shower cake). No wonder your co-workers like you -- you always go the extra mile.

I love looking at the blog and seeing it's now less that 120 days before you'll be heading home. JK's working extra hard getting the closets/room ready. Yea!!!
